Holiday Brunch Casserole

Instructions
Prepare all the ingredients ahead of time.

Cook the bacon in a large skillet over medium-high heat, turning occasionally until it is evenly crispy and browned, about 10 minutes. Transfer the cooked bacon to a paper towel-lined plate and crumble it once it's cool enough to handle. Discard the excess grease from the skillet.

Sauté the onions and mushrooms in the leftover bacon grease until the onions become translucent and the mushrooms are tender, about 5 minutes.

Grease a 9x13-inch casserole dish with 1 tablespoon of butter. Layer the potatoes at the bottom, seasoning with salt, pepper, and garlic salt. Add the crumbled bacon on top, followed by the sautéed onions and mushrooms.

In a mixing bowl, whisk together milk, eggs, and parsley. Pour this mixture over the casserole and sprinkle with shredded Cheddar cheese. Cover and refrigerate for 8 hours or overnight.
