Instructions

Sprinkle the yeast into warm water in a small bowl, ensuring the water is no hotter than 100°F (40°C). Let sit for 5 minutes until the yeast softens and begins to foam.

In a large bowl, sift together flour, sugar, 1 tablespoon oregano, and 1 teaspoon salt. Mix in the egg and oil, then stir in the yeast mixture. Once the dough comes together, turn it out onto a floured surface and knead for about 8 minutes until smooth and elastic. Lightly oil a large bowl, place the dough inside, and turn it to coat. Cover with a cloth and allow it to rise in a warm spot (80 to 95°F / 27 to 35°C) until doubled in size, about 1 hour.

In a saucepan, cook diced tomatoes, tomato paste, onion, 1 tablespoon oregano, garlic, onion powder, 1 teaspoon salt, and pepper over medium heat. Stir until the sauce thickens, about 15 to 20 minutes.

Punch down the dough and transfer it to a floured surface. Divide the dough into two equal pieces, shaping them into rounds. Let them rest for 10 minutes before forming into rectangles and placing them on the prepared baking sheet. Spread the tomato sauce over the dough, sprinkle with 1 1/4 cups of mozzarella cheese, and top with bell pepper, onion, and mushrooms. Finish by sprinkling the remaining 1/4 cup mozzarella cheese on top.
