1 cup soft bread crumbs

½ sweet onion, minced

2 tablespoons chopped fresh dill

2 teaspoons grated lemon zest

1 clove garlic, minced

¼ cup olive oil, divided

salt and pepper to taste

4 trout, cleaned and head removed
Cooking Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil.

In a bowl, mix the breadcrumbs with onion, dill, lemon zest, garlic, and half of the olive oil. Season with salt and pepper to taste. Stuff the trout with this mixture, then drizzle with the remaining olive oil and season again. Arrange the trout on the prepared baking sheet.

Roast the trout in the preheated oven for about 20 minutes, or until the skin is golden and the flesh easily flakes with a fork.
