Mini Beef Wellingtons for Individual Servings

1 pound fresh mushrooms, sliced

½ cup dry sherry

½ cup chopped onion

¼ cup butter

¼ cup chopped parsley

6 (8 ounce) fillets beef tenderloin

1 (17.5 ounce) package frozen puff pastry, partially thawed
Cooking Instructions
In a large skillet over medium heat, combine mushrooms, sherry, onion, butter, and parsley. Cook and stir the mixture until the liquid evaporates and the mushrooms turn golden brown, which should take about 15-20 minutes. Once done, let it cool and spread the mushroom mixture over each beef tenderloin piece.
Cut each sheet of partially thawed puff pastry into 3 equal rectangles, yielding 6 pieces in total. Roll out each rectangle to about 1/4-inch thickness, then place a piece of beef in the center. Fold the edges around the beef, sealing them carefully without making the seams too thick. Arrange the wrapped beef on a baking sheet, cover with plastic wrap, and refrigerate for at least 35 minutes before baking.
Preheat your oven to 425°F (220°C).
Bake the Beef Wellingtons in the preheated oven for 25 minutes. For medium-rare, the internal temperature should reach 130°F (54°C) when checked with an instant-read thermometer. Allow the Wellingtons to rest for 5 minutes before serving.
