Mini Lasagna Muffins

24 wonton wrappers

1 ¾ cups grated Parmesan cheese

1 ¾ cups shredded mozzarella cheese

¾ cup ricotta cheese

1 cup pasta sauce (such as Muir Glen®)

¼ cup chopped fresh basil, or to taste (Optional)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease the muffin cups with cooking spray.
Heat a large skillet over medium-high heat. Brown the beef, stirring frequently for 5 to 7 minutes until crumbly. Season with salt and pepper. Drain off any excess grease from the beef.
Use a biscuit cutter to cut wonton wrappers into 2 1/4-inch circles. Place one wonton in each muffin cup. Add a layer of Parmesan, mozzarella, and ricotta cheese in each cup, followed by a portion of ground beef and pasta sauce.
Divide 1/2 cup each of Parmesan, mozzarella, and ricotta cheese, along with half of the ground beef mixture and 1/2 cup pasta sauce, between the muffin cups. Layer on top of the wonton wrappers, then repeat the layers with the remaining ingredients, finishing with a top layer of Parmesan and mozzarella cheese.
Bake in the preheated oven for 18 to 20 minutes, or until the edges are golden brown. Let the cupcakes rest in the muffin tins for 5 minutes before loosening them with a knife and removing. Garnish with fresh basil and serve.

Chef's Tips
A drinking glass can also be used to cut wonton wrappers, and you can cut multiple at once. If you prefer a more rustic look, you can skip the cutting altogether!
