Rice and Peas

Ingredients

1 cup basmati rice

1 tablespoon butter or margarine

2 whole cloves

1 (2 inch) piece cinnamon stick

1 serrano pepper, chopped

1 teaspoon minced fresh ginger root

¼ cup green peas
-
salt to taste

¼ teaspoon white sugar

2 cups water
Instructions

Rinse and drain the rice.

Heat a saucepan over medium heat. Add butter or margarine and allow it to melt. Stir in cloves, cinnamon, Serrano chili, and ginger. Sauté briefly to release the flavors. Add the rice, stirring to coat it evenly. Then mix in the peas, salt, and sugar. Pour in water and bring it to a boil.

Lower the heat to a simmer, cover, and cook for 15 to 20 minutes, or until the rice is tender.
