2 (9 inch) pie crusts

1 (10 ounce) package frozen chopped spinach, thawed and drained

½ teaspoon salt

½ teaspoon freshly ground black pepper

¼ teaspoon ground nutmeg

15 ounces ricotta cheese

8 ounces mozzarella cheese

1 cup grated Parmesan cheese

2 cups diced Cheddar cheese
Instructions

Preheat the oven to 350°F (175°C). Press the bottom pie crust into a pie dish.

In a large bowl, combine spinach, salt, pepper, and nutmeg. Add ricotta, mozzarella, Parmesan, and Cheddar cheeses. Mix thoroughly, then pour the mixture into the pie crust. Place the second crust on top, sealing the edges and trimming off any excess.

Bake in the oven for 40 minutes. Let it rest for 10 minutes before slicing into wedges.
