Shrimp & Pesto Cream Sauce

3 roma (plum) tomato, diced
Instructions
Bring a large pot of salted water to a boil. Add the linguine and stir to prevent sticking. Cook uncovered, stirring occasionally, until the pasta is al dente, about 8 to 10 minutes. Drain the pasta once it's cooked to your liking.

Heat olive oil in a large skillet over medium heat. Sauté the onion until it's soft and translucent. Add garlic and butter, continuing to sauté for about 1 minute until the garlic becomes fragrant.

Add the cheese and stir until it melts smoothly. Mix in the pesto. Then, add shrimp, mushrooms, and tomatoes, cooking for an additional 4 minutes or until everything is heated through.
