Simple Chicken and Dumplings

1 (32 ounce) container chicken broth

4 skinless, boneless chicken breast halves, cubed, or more as needed

1 onion, chopped

½ pound baby carrots

2 stalks celery, chopped

1 bay leaf

salt and ground black pepper to taste

2 ¼ cups baking mix (such as Bisquick)

⅔ cup milk
Instructions

In a large pot, combine chicken broth, chicken, onion, carrots, celery, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat, cover, and simmer for 20 to 25 minutes, or until the chicken is cooked through and the vegetables are tender.

In a separate bowl, mix the baking mix and milk to form a sticky dough. Drop spoonfuls of the dough into the simmering soup. Cover and cook for an additional 10 minutes, or until the dumplings are fully cooked.
