Simple Lima Beans

½ medium onion, finely chopped

1 ½ cups chicken broth

1 (16 ounce) package frozen baby lima beans

1/4 cup water, or as needed to cover
Instructions

Lightly coat a large saucepan with cooking spray and heat over medium. Add the chopped onion and cook until soft and translucent, about 5 minutes. Pour in the chicken broth and bring to a boil.

Stir in the lima beans and add enough water to just cover them. Bring back to a boil, then reduce the heat to low, cover, and simmer until the beans are tender, about 30 minutes.
