Vegan Black Bean Burgers Recipe

1 (15 ounce) can black beans, drained and rinsed

3 baby carrots, grated (Optional)

⅓ cup chopped sweet onion

¼ cup minced green bell pepper (Optional)

1 tablespoon minced garlic

3 tablespoons chile-garlic sauce (such as Sriracha®), or to taste

1 tablespoon cornstarch

1 tablespoon warm water

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon seafood seasoning (such as Old Bay®)

¼ teaspoon salt
-
¼ teaspoon ground black pepper

2 slices whole-wheat bread, torn into small crumbs

¾ cup unbleached flour, or as needed
Cooking Instructions

Preheat the oven to 350°F (175°C). Lightly grease a baking sheet.

In a large bowl, mash the black beans. Add grated carrots, chopped onion, diced bell pepper, and minced garlic. Mix thoroughly.

In a small bowl, whisk together the chile-garlic sauce, cornstarch, water, chili powder, cumin, seafood seasoning, salt, and black pepper.

Combine the chile-garlic sauce mixture with the mashed bean mixture. Stir in breadcrumbs, then gradually add flour, 1/4 cup at a time, until a sticky dough forms.

Spoon the batter onto the prepared baking sheet, forming patties about 3/4-inch thick. Shape them into round burger patties.

Bake the patties in the preheated oven for approximately 10 minutes on each side, or until they are cooked through and crisp on the outside.
Cooking Tip
If you prefer, you can swap one egg for cornstarch, though this will no longer make the recipe vegan.
