Apple Cider Braised Pork in the Slow Cooker

1 (4 pound) boneless pork shoulder roast

2 shallots, sliced

1 rib celery, chopped

½ cup apple cider vinegar

2 ½ cups apple cider

4 cloves garlic, peeled

2 tablespoons cold unsalted butter, cut into small pieces

1 tablespoon chopped fresh herbs (Italian parsley, sage, or thyme)
Instructions
Season the pork with salt and black pepper. Heat oil in a large skillet over high heat. Add the pork and sear on all sides until browned, about 3 minutes per side. Once seared, transfer the pork to the slow cooker.
In the same skillet, add shallots and celery over medium heat. Cook and stir until they start to soften, about 3 to 4 minutes. Pour in the apple cider vinegar and cook, scraping up any browned bits from the skillet, until the liquid has mostly evaporated, around 4 to 5 minutes. Transfer to the slow cooker.
Pour apple cider, garlic cloves, and bay leaf into the slow cooker; cover. Cook on Low for about 6 hours, turning the pork every 1 to 2 hours, until the pork is fork-tender but still holds together. Transfer the pork to a plate and cover it loosely with foil.
Strain the cooking liquid through a fine-mesh sieve, discarding the solids, into a large saucepan over high heat. Bring the sauce to a boil, then reduce the heat and simmer, skimming off any fat, until the sauce is reduced to a quarter of its original volume, about 10 minutes.
Remove from heat and stir in Dijon mustard and cayenne pepper into the sauce. Gradually whisk in the cold butter until fully combined. Add fresh herbs, and season with salt and black pepper to taste.
Slice the pork into 1/4-inch thick slices and serve with the sauce.
