Carly’s Salmon En Papillote: A Delicious Parchment-Wrapped Dish

4 12x18-inch pieces of parchment paper

1 lemon, thinly sliced

½ cup green onions, chopped

8 spears fresh asparagus, cut into 1-1/2 inch pieces

4 teaspoons olive oil
Instructions
Begin by preheating your oven to 350°F (175°C).
Rinse the salmon fillets under cold water, place them on a plate, and squeeze fresh lemon juice over the fillets. Season with salt and black pepper.
Take a sheet of parchment paper and fold it in half. Place a salmon fillet in the center of one side of the folded paper. Top with 1 or 2 slices of lemon and surround with 2 cut-up asparagus spears. Sprinkle 2 tablespoons of chopped green onions over the lemon, then fold the paper over the salmon, sealing the edges by folding them multiple times around the packet. (Do not use tape.) Place the packets on a baking sheet and lightly brush the tops with about 1 teaspoon of olive oil.
Bake in the preheated oven for 20 to 25 minutes, or until the asparagus is tender and the salmon is fully cooked and flakes easily. To serve, carefully cut open the paper packet to release the aromatic steam.

"En papillote" is a French term meaning "in paper." This method allows you to cook fish or other proteins along with your choice of seasonings and vegetables, all sealed in parchment paper for enhanced flavor.
