Cheesy Roasted Zucchini Bake

3 medium zucchini, sliced

2 medium onions, sliced

3 tablespoons olive oil

1 (16 ounce) package penne pasta

1 (28 ounce) jar marinara sauce

½ cup grated Parmesan cheese
Cooking Instructions

Preheat your oven to 400°F (200°C).

Toss zucchini and onions in a large bowl with olive oil, ensuring they're evenly coated. Arrange the vegetables in a large baking dish.

Roast the vegetables in the oven for about 30 minutes, or until golden. Once done, season with salt and pepper, and lower the oven temperature to 350°F (175°C).

While the vegetables roast, bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, for about 11 minutes, or until al dente. Drain well.

Lightly grease a 9x13-inch baking dish.

Heat marinara sauce in a saucepan over medium heat until hot. Spread the hot sauce evenly in the prepared dish. Top with cooked pasta, followed by the roasted zucchini and onions. Finish with a sprinkle of Parmesan cheese.

Bake in the preheated oven for 35 to 40 minutes, or until the sauce is bubbling. Let the casserole rest for a few minutes before serving.
