Creamy Spinach Lasagna with Alfredo Sauce

1 (10 ounce) package frozen chopped spinach

29 ounces Alfredo-style pasta sauce

½ cup skim milk

1 (8 ounce) package lasagna noodles

1 pint part-skim ricotta cheese

1 egg

8 ounces shredded carrots

8 ounces fresh mushrooms, sliced

½ cup shredded mozzarella cheese
Cooking Instructions

Preheat your oven to 350°F (175°C). Lightly coat a 10x15 inch lasagna pan with non-stick spray.

Place spinach in a bowl and microwave uncovered on high for 4 minutes. Mix in ricotta cheese. Beat the egg in a separate bowl, then add it to the spinach and ricotta mixture. Stir well to combine.

In a separate bowl, combine pasta sauce and milk. Stir thoroughly.

Spread about 1/2 cup of the pasta sauce mixture in the bottom of the prepared pan. Arrange 3 uncooked lasagna noodles on top of the sauce. Spread half of the spinach mixture over the noodles, followed by half of the carrots and mushrooms. Add another layer of 3 noodles, then pour 1 1/2 cups of sauce over them. Top with the remaining spinach mixture, followed by the remaining carrots and mushrooms. Place the final 3 noodles on top, and pour the remaining sauce evenly over everything. Sprinkle with mozzarella cheese. Lightly spray a sheet of aluminum foil with cooking spray and cover the lasagna tightly with it, spray side down.

Bake the lasagna for 50-60 minutes. After baking, remove the foil and spoon additional sauce over the exposed noodles. Turn off the oven and return the lasagna to the warm oven for another 15 minutes. Serve immediately, or let it rest until ready to serve.
