Zesty Veggie Lasagna

1 (16 ounce) package lasagna noodles

2 teaspoons olive oil

⅔ cup diced red bell pepper

⅔ cup diced orange bell pepper

⅔ cup diced yellow bell pepper

⅔ cup diced green bell pepper

1 small yellow onion, diced

2 (14.5 ounce) cans diced tomatoes

1 (6 ounce) can tomato paste

1 ½ cups water

1 dash crushed red pepper flakes

¼ cup grated Parmesan cheese (Optional)

1 (15 ounce) container ricotta cheese

1 (8 ounce) package shredded mozzarella cheese

4 eggs

¼ teaspoon black pepper

¼ teaspoon dried oregano, crushed

¼ cup grated Parmesan cheese (Optional)
Instructions

Bring a large pot of salted water to a boil. Cook the lasagna noodles for 8-10 minutes until al dente. Drain, rinse with cold water, and lay out on wax paper to cool.

Sauté bell peppers and onions in olive oil in a large pan until the onions become translucent. Add diced tomatoes, tomato paste, water, and red pepper flakes. Adjust red pepper flakes to taste for more heat. Let the mixture simmer for 30 minutes.

Preheat your oven to 375°F (190°C). In a medium bowl, mix together Parmesan, ricotta, mozzarella cheeses, eggs, black pepper, and oregano.

Spread a thin layer of sauce at the bottom of a 9x13-inch baking dish. Set aside 1/2 cup of the sauce. Layer three lasagna noodles on top, followed by some of the cheese mixture and vegetable sauce. Repeat layers with remaining noodles, cheese, and sauce. Top with the reserved sauce. Optionally, sprinkle with additional grated Parmesan.

Cover with foil and bake for 40 minutes or until the lasagna is bubbling. Remove the foil in the last 10 minutes for a golden top.
