During my time on the ship, I indulged in Huevos Rancheros as much as possible. This recipe is versatile and can be customized with any vegetables and proteins you prefer!

Here’s a snapshot of the eggs I savored on the cruise... I told you they were incredible! Perfectly seasoned with Mexican spices and fresh pico de gallo, featuring pinto beans and accompanied by several delicious salsas. One of my top picks was a smoky chipotle sauce.
After brunching on the ship, I would lounge on the decks, soaking up the warm sunshine and gazing at the beautiful blue Caribbean Sea. It was the ideal way to relax and unwind!

This recipe is quick to prepare, making it ideal for entertaining guests or whipping up a fast and healthy meal for the family!
What could possibly top off runny, drippy eggs?

Simply season and warm up some black beans. Add a refreshing salad of diced tomatoes and avocados on top. And don’t forget that perfectly runny egg!
Finish it off with crumbled feta, goat cheese, or queso along with some sliced green onions.

Ingredients
- 4-8 corn tortillas
- olive oil
- 1 can (15 ounces) black beans, drained & rinsed
- 4 large eggs
- crumbled goat or feta cheese
- 2 plum tomatoes, seeded & diced
- 1 avocado, chopped into 1/2 inch pieces
- 1 tablespoon lemon juice
- garlic salt & black pepper to taste
- 1/4 cup chopped green onion
- fresh cilantro
- hot sauce
Directions
- Combine the tomatoes & avocado with lemon juice and set aside.
- In a sauté pan, heat 1 tablespoon of olive oil, then add the black beans & 2 tablespoons chopped cilantro. Cook for a few minutes until heated through.
- In a separate pan, heat a splash of oil, warming each tortilla for 30 seconds on medium heat. Add more oil and cook the eggs sunny side up or over easy.
- To assemble: Arrange the tortillas (I prefer stacking 2) and top with black beans, tomato/avocado salad, and eggs. Finish with cheese, green onion, and chopped cilantro.
