Chef John's Ultimate Cheese Fondue Recipe for Cheese Lovers

Cheese fondue is one of those classic dishes that I've been asked to make hundreds of times over the years, but for some reason, I never got around to filming it. Part of the delay was not having a proper fondue set. We didn't get one as a wedding gift, and unless you're Swiss, who actually buys a fondue set? That all changed after a visit to a local thrift store.
While browsing through aisles filled with old treasures and vintage finds, I stumbled upon the fondue pot of my dreams, looking gorgeous in all its mid-century glory. With that excuse for not making a fondue video gone, the next challenge was to find a foolproof, easy recipe.
Luckily, it turned out to be easier than finding the perfect fondue pot. Thanks to the many Swiss fondue enthusiasts sharing their recipes and techniques online, I was able to sift through dozens of methods. After some experimentation and adjusting the ingredient quantities, I came up with what I believe is the ideal recipe. Of course, I'll leave it up to you to decide if it's truly perfect or if I was just overwhelmed with cheese, but I really hope you'll give it a try. Enjoy!
